 Ramps are Wild Onions
Ramps, or from Wikipedia: Allium tricoccum -- known as the ramp,spring onion, ramson, wild leek, wood leek, and wild garlic -- is an early spring vegetable, a perennial wild onion with a strong garlic-like odor and a pronounced onion flavor.
I had these growing wild in my yard in Northern Westchester County for years before I read an article about ramps in the New York Times and figured out what these were! I have an abundance of this delicious green and bulb growing wild right outside my door. In fact I have so many that i sell them and of course give them to friends. They are the frist green that pops up in the springtime.
In season, served at The Bedford Post, Bernard's, Le Chateau, and Cafe of Love Restaurants.
